I first found Minor's bases at BJ's and quickly decided to chuck buying canned chicken broth and beef broth and boullion cubes. It's cheaper than canned, too, if you can find a local source. In using these to make recipes, I add the appropriate amount of base for the amount of water or liquid called for and do not add any salt called for by the recipe until the very end, when it can be added to taste. I note the amont of salt added and record it for future use. This is especially applicable in recipes calling for boullion cubes (horribly salty usually). Of late, in talking with restaurant owners,I learned Minor bases a what many restaurants use. The base keeps in the refridgerator seemingly forever. Search the internet for sources or, better yet, ask your local restaurants if they use it and where they get their supplies locally.

This is the best vinaigrette we've ever used. It is the perfect blend of tangy, spicy, and tomato-y. It isn't a sweet vinaigrette, more like a dressed-up Italian. Try our favorite; split open a sandwich roll, put Kraft Sun Dried Tomato Salad Dressing on both sides; stack avocado slices, thin sliced red onions, havarti cheese, deli-sliced baked chicken (or turkey), & thin cucumber slices or shredded lettuce. DELICIOUS!!! Also excellent as a dressing on pasta salad, marinade for baked chicken, and a dip for breadsticks or pizza crust. Oh, yes, and it is almost the only dressing we use on green salad anymore.

I'm a big spice mix fan and have to give a strong thumbs-up for Chef Tom's Bengal Masala Rub. Surprisingly, this is neither a 'burn your mouth hot' rub, nor is it even heavy on the cumin and curry flavors. (Though why *wouldn't* you be surprised, given the exceedingly generic Product Description that Amazon lists for this mix!)
There really isn't a single dominant note in this rub, it's a balance of cardamom, smoked paprika, garlic, and even (I suspect) cinnamon. I'd advise people who want to kick things up a notch to add a dash of cayenne or black pepper.
This works very well on lamb, chicken, and (surprisingly!) fish such as catfish or snapper. Tends to be lackluster on red meats and fish like tuna and salmon.
Only the two standout mixes that Chef Tom sells: Chef Tom Douglas Rub With Love Salmon Rub and Chef Tom Douglas Rub With Love Chicken Rub are better than this one, mostly due to their extra versatility.

First of all, I downgraded this from 5 to 4 stars because of the packaging only. It comes packed in a plastic pouch that makes it very difficult to use every last bit. As far as the good stuff, I betcha this is what they use in Thai restaurants for panang curry. It is the simplest thing I've found when I'm really jonesing for some great curry - add some coconut milk (the real thing, not that lite junk), a little fish sauce, some sugar, and whatever veggies you have around - red bell pepper, carrots, zucchini, a nice fat serrano chili - maybe a little chicken - ladle it over some brown rice - voila! A great meal. I have kept this in the fridge for over six months at a time with no molding or spoilage whatever. Try it!

Friends gave us a jar of this as part of a "Taste of the Northwest" gift basket while we were visiting Seattle last year. We eventually tried it, and fell in love with the taste, texture and ease of preparation. You coat the salmon in a bit of the rub, and saute it in a little olive oil. The resulting crust adds a mildly spicy, sweet flavor and a very slight crust to the salmon that my wife and I like better than any other way we've tried salmon. Highly recommended, and we'll be ordering more as we're almost out.

I can't imagine why but it seems that grocery stores have stopped stocking this item. If you haven't tried it you must, it is the best coating mix available and my family keeps asking me to make chicken only with this shake and bake. It has a very different flavor than any BBQ sauce on the market, a flavor all it's own that is really delicious and goes with any side dish. I have made stuffing, mashed potatoes (a favorite) and almost any vegetable to go with it and everyone always has a second helping of chicken.It's perfect for company because it is unique and tastes like something you would cook for a special occasion. I am always afraid that they will stop making it, it really has become a staple in our home and even the most finicky people love it, kids all seem to love it and I love it because it is quick and easy. It's a very unique flavor, I want to say a little sweeter than most BBQ sauces or flavorings but not really sweet , kind of like a honey BBQ but better, that can be used on pork chops as well. There is a plastic bag enclosed to shake it in but I find that more of the mix sticks to the sides and it is very hard to coat the chicken , a lot of wasted mix that way. I put it on a plate a little at a time and add as needed, then I rinse the chicken pieces and kind of lightly roll them on the plate in the coating (shaking a little out of the packet on spots that are not coated) and then place them into a baking pan that I line with foil, it makes clean up much easier after cooking, almost don't need to wash the pan this way.Try to get all the pieces covered especially on the tops because the bottom will come off a little bit from the grease that cooks out of the chicken. Any mix left in the packet I shake on pieces that don't look completely covered and then just on top of all of them. I usually get a package of about 3 or 4 half breasts and a package of 6 thighs and one pack of mix will cover it all if you roll it on a plate. It becomes very sticky when it gets wet so it will stick to the plate, your fingers and of course the chicken pieces. I have also used a little bit of plum jam brushed on the chicken before coating it and thats very good too, but honestly you don't need to add anything it is delicious the way it is. Cook it long enough to get browned and crispy and remove it to a serving dish right away so it doesn't sit in the grease and you will be extremely happy with the results. I would really be interested to hear from someone who has never cooked with this before and see what they think.

As an avid cook and spice mix experimenter, my hat is off to Chef Tom and his 'Spice Girls' for creating a world-class chicken spice. This is one tangy and flavorful mix that blows the doors off anything similar one could find at a supermarket. Primary notes are paprika and brown sugar, but what my nose smells first is ancho chile and star anise.
This mix creates a light crust on the food and colors it brilliantly red. Surprisingly, it's also very good on the 'heavier', red-fleshed fish like salmon. Highly recommended along with Chef Tom's other standout product, Chef Tom Douglas Rub With Love Salmon Rub.
