I always have vegetable stock on hand for those emergencies when I don't have time to make it fresh. Trader Joe's makes a nice little reduced sodium veggie stock that comes 10 or 12 in a box which are about a cup each when reconstituted, and I also keep those in the cupboard.
Let me tell you, the day these More Than Gourmet Veggie-Glace Gold packs arrived at my door was a wonderful day for our household because now we can enjoy wonderful sauces that are rick and complex, more so than any I'd made in years. Unlike traditional demi-glace which is produced by roasting bones, these are strictly meat-free, yet they are so full of the flavors of roasted vegetables, enhanced by the addition of red wine, all which have been reduced to a "gelatinous" consistency. I've added this to a stir fry when I simply didn't feel like messing with an assortment of spices, and I've also used it in making a rich sauce with nuts for freshly made pasta. The small size is deceiving because even though each package is a little plastic flat cup with an aluminum seal, it is as dense as would be expected from a demi-glace. I look forward to trying the mushroom version for variety. More Than Gourmet offers recipes on their website which I found inspiring. I will buy this again and strongly recommend it particularly to vegetarians who enjoy complexity in flavors.

I must say, I was hesitant to order a "tub" of demi glace base, but I just don't have the time or inclination to make my own these days.
I received the product a few days ago, ordered 2 tubs of Demi-Glace Gold and a tub of their Chicken Demi (I know, but I figured why not?)
Opened up the Demi-Glace Gold, and could immediately tell this wasn't just some "base". The aroma is rich, not over powering, and has a very dense gelatinous texture.
I made a roasted chicken that evening and decided to do a quick Cabernet and Port wine reduction, just simple to check out the new product.
Made the Demi per the instructions (1T to 4T water, heat for 5 mins), then added it to the wine reduction (another 4T of reduced liquid or so), then added another 4T of chicken stock (just good Chicken stock, not the Chicken DemiGlace I mentioned earlier), let this simmer while whisking over a med-low heat for about 3-4 minutes while it all pulled together.
A tiny dash of Kosher salt, and time to serve.
The end result was absolutely amazing, and the DemiGlace Gold performed every bit as good as a homemade DemiGlace. The sauce had that wonderful shine to it, that extra richness that you can't get without a Demi, the right texture, it was bright and complex. Every bit as good as a sauce made with homemade demi.
This product is the real deal, or as close as it's going to get. It is an amazing time saver, and for the price it's worth every penny.
If you are like me and hesitated, wondered if it would be worth the money, wondering if it tasted "fake" or was otherwise a waste of money, do yourself a favor and get this product.
(Note to those not familiar with Demi Glace, this is not a "base" per se, and while I guess you could use it as one, I recommend using it to create sauces, experiment a bit, and you'll find that soon, using demi glace, you'll be creating sauces that are every bit as good as anything you'll find in an expensive restaurant. It's a great way to experience what that "special something" in gourmet sauces is, without having to make your own demi, and without having to invest a few days to make it yourself)

Glace de Viande Gold in a classic brown stock reduction. It can be reconstituted into a full flavored stock by using 1 part glace to 20 parts water. The stock is great for moistening stuffing, making soups or making a jus for dipping. The flavor is much more complex and professional tasting than other prepared stocks and broths found in most grocery stores.
A glace is traditionally made by reducing stock veal stock for 8-12 hours until it has the consistency of a thick syrup. To bring this product to the consistency of a classic glace add 1 part de Viande Gold to 3 parts water. I use the glace for adding flavor to sauces when I don't want any extra thickening agent. If I want the flavor of a glace but also want it to help hold a sauce together I use More than Gourmet's Demi-Glace Gold which is pretty much the same thing but it contains a roux.
These products last for months in the frig so I purchase these in the 16 oz. tubs. For some of the glaces and stock reductions that I use less frequently I purchase the 1.5 oz. pucks. They are made using classic recipes and are the real deal. I keep 8-10 different varieties on hand in my kitchen and would not want to think about cooking without them.

I have been buying Jus Poulet Lie Gold for more than ten years. It is excellent for cooking when either chicken broth or demi glace is called for. I am convinced that it is more economical and better quality than anything you can buy in a can or in the form of powder. It keeps on the shelf unopened almost indefinitely and the same in the refrigerator after it is opened.

As I've kind of moved ahead in my cooking I am finding that I use stock a lot more in my cooking. I use it all the time for things like risotto, as a substitute for water on regular rice for more flavor, in sauces and stir fry's, etc. It felt like every time I was making a trip to the grocery store I had to remember to pick up more stock, particularly chicken stock since I seem to go through it much faster than other types of stock. This stock is great tasting with good ingredients. The packaging is good and convenient to use. The size is just about perfect for most things and you can refrigerate what you don't use for a couple of days. The quantities that a standard order contain don't overwhelm you with too much of it, but is enough that I just order a couple of these every few months and keep some in storage.
Buy it if you use stock in your cooking on a regular or semi-regular basis (and you might find you use it a lot more if you have it on hand).
Don't buy it if you don't cook that much or are a vegetarian or something.
