(More customer reviews)I use Bob's Red Mill wheat gluten flour for making seitan, a wheat-gluten "meat" familiar to vegans and vegetarians. It is very easy to use, is obviously high-quality, and keeps well. I've found Bob's works the best out of all the brands for this use. I just wish that it was organic and that they made bigger bags (the case comes with a lot of packaging, which seems like a waste).

(More customer reviews)Since being diagnosed with Celiac Disease nearly two years ago I have had to learn to eat and cook differently. I have missed some old stand by recipes I've used and enjoyed for many years. Like making stroganoff from leftover meat using canned cream of mushroom soup as a main ingredient. I just found this product was available. Weird to be so excited about soup! This soup is has a thinner consistency than those most of us have grown up using like Campbell's, etc. I need to account for that and the soup is a little more bland. So taste as you go and add salt, pepper, and whatever you might like.
For those of us with Celiac this is a huge convenience.

(More customer reviews)I keep a bunch of these in my office drawer for emergency lunches and snacks, and I love them. They taste great (not exactly chicken-y, but to me that's a plus), the nutrition isn't too bad -- certainly not when compared with mainstream instant ramen packages with their artery-hardening sodium levels and fried noodles (these are baked, and the sodium level isn't too bad), and the convenience simply can't be beat. They may not taste like "authentic" Japanese ramen noodles, but authenticity isn't their strength; instead, they allow you to enjoy convenience foods without incurring such a high cost to your body. Since my diagnoses there have been many favorite recipes I've stopped preparing because I had no gluten free creamed soup and making the soup to use in a recipe was way to labor intensive for me.
I was thrilled to find this soup to use in cooking. The consistency is a thinner than mainstream creamed soups, so the amount of liquid has to be adjusted. A small price to pay!
