The only thing I did wrong when making them, was using Bob's Red Mill sAll purpose gluten free flour to roll the biscuit dough in. It made the outside of our biscuits taste like raw beans... yuck! I used White Rice flour, and they tasted great ;)
For a "buttery" flavor, put butter (or, if you are GFCF a non-casien containing margarine spread) on the top for a taste similar to KFC. Taste great with jelly in the middle, too. :) I froze the unbaked "left-over" biscuits, and they turned out well 2 months later. :)

(More customer reviews)This flour works fine for certain things, depending on your taste preferences. It has a very strong aftertaste (kind of bitter/sour) because of the bean flour. Thus it is pretty strong in plain breads and rolls. If you don't mind that, then good for you! (My husband is pretty sensitive and can't tolerate the bean flour or taste very well.) I found it works better in cookies, chocolate or spice cakes, brownies, banana bread, and pizza dough. Because these baked goods are made with other strong flavors, they help mellow out the bean taste which can be pretty overpowering if you don't have something with which to temper it. I like the consistency of this flour better than the rice flour blend I've also been using but again, consider your taste preferences and what you'll be baking/cooking with it.

(More customer reviews)I use Bob's Red Mill wheat gluten flour for making seitan, a wheat-gluten "meat" familiar to vegans and vegetarians. It is very easy to use, is obviously high-quality, and keeps well. I've found Bob's works the best out of all the brands for this use. I just wish that it was organic and that they made bigger bags (the case comes with a lot of packaging, which seems like a waste).

(More customer reviews)I can't eat any kind of wheat flour, but since I discovered Almond Meal (Bob's Red Mill), my diet is much easier to live with. I use 4 parts almond meal with 4 parts garbanzo (bean) flour and 1 part potato starch (NOT potato flour)as a substitute for regular flour. I've made brownies, peanut butter cookies, banana bread, and carrot cookies and found the texture and taste are not noticeably different than the original recipe, at least to me.

(More customer reviews)I have been baking gluten-free on a daily basis for approximately 3 years. Believe me when I say that I have tried just about every brand of Brown Rice Flour there is. Here is the skinny:
If you want a very tender, melt in your mouth baked good that is reminiscent of your wheat flour days, use Authentic Foods Brown Rice Flour. Their BRF is so fine that it is almost silky. If you bake as much as I do, and want to use Authentic Foods BRF for everything, you should look into getting a second job. That stuff is PRICEY.
If you don't want to get a second job, Bob's Red Mill BRF is the way to go, but your baked good will suffer a bit due to the sandy, gritty texture of this flour. Through trial and error, you will find that it works fine for some recipes, but others may seen a bit more gritty and crumbly. Processing this BRF in the Cuisinart or blender doesn't seem to help. So, I plan to beg Bob to choose a finer grind for the BRF his company produces. PLEASE. Pretty please? I would love you forever.
