(More customer reviews)This stuff has been a big hit with my family, especially with pork chops. We are serious "foodies" (I spent my early life in the restaurant business, and still do a lot of gourmet cooking), and find this to be an interesting flavor profile to add to *certain* dishes.
Because of its intensity across the flavor spectrum (very sweet, very fruity, quite spicy) its range of possible uses is fairly limited, but very noteworthy. I find the amount of seeds and pulp to be annoying for most uses, so I usually "water it down" with some stock or water (or fruit juice), warm it gently, then press it through a sieve to make a nice finishing sauce for pork or duck.
I have not been able to find or develop a recipe yet where I can use this sauce as part of the cooking process, probably because of the sugar content - it tends to burn when used as a BBQ marinade or sauce. Speaking of BBQ, it is very nice as a "finishing sauce" for BBQ ribs or chicken - I pull the meat off the grill and brush with the warmed sauce and then serve. Generally my guests will prefer the ribs finished with this sauce over those finished with a traditional BBQ sauce. This may be because of the unique flavor profile, but I also think that the combination of raspberry and chipotle is a brilliant combo for certain meat dishes.
My favorite recipes for this product:
Brined thick-cut pork rib chops, grilled or pan seared and then finished with a warmed, strained version of this sauce that has been slightly reduced with chicken stock.
BBQ Ribs finished with an undiluted glaze of this sauce
Seared duck breasts served on a "coulis" of this sauce that has been warmed with duck stock, reduced and about 1/2 of the pulp and seeds removed.
All three are big hits with guests and my family.
Other than these dishes, I have not been able to come up with anything that doesn't taste "weird" with this sauce. (For example, BBQ NY Steaks were awful, and it is downright bizarre on a burger).
My son likes it on a turkey sandwich, but I have to admit I'm not a big fan
