This is the best curry paste I have ever used. I'm vegan and it contains no animal by-products. I saute onion and garlic, add some fresh tomatoes and my favorite vegetables and let it simmer. The outcome is perfect!

Patek's is my favorite curry paste--no MSG and simple ingredients. For a great, easy meal on an evening when you are too tired to make a curry from scratch, saute some onions, throw in a can of tomatoes, some water, and a few tablespoons of Patek's Mild Curry Paste, and then you can take it wherever you like it--meat, tofu, veggies--as your fancy strikes you.
Now this paste may say "mild," but there is still enough spice to make your mouth tingle pleasantly--just enough. When I serve Patek's mild, I take out some chicken or whatever before serving to my four-year-old--I don't think she could handle the "mild" spice level. Mom and Dad love it, though.
The downside is that one little jar does not go a long way. If you use the paste in the concentration that it calls for (and I recommend doing so, for an authentic Indian taste), you will get two or three dinners out of it. But for flavor and ease of use and sheer delight, you cannot beat Patek's. The guests you serve it to will be amazed--and you can hide your little jar in the refrig and bask in all that glory.
Amazon's cost is high for this item, at $5, but if convenience is important to you, then that's a consideration--having a powerful culinary secret delivered to your door might make the extra buck or two worth it. If you have time and are near an Asian/Indian foods store, then expect to pay $3 if you are lucky, or around $4 in most places. Stock up, because unopened, these last forever.

This paste is wonderful - bought at our local Inidan grocer for $4.99 so this is a good deal on Amazon for anyone not in a Indian grocery store area. You can save tons of time not having to get out all your spices, morter and pestle, etc. We find that if we just stir-fry with a little extra oil, some onions, maybe a little slice of fresh ginger, then mix in vegetables and meat (chicken needs to be cooked/browned separately however), some water if necessary for veges, and you soon have a dish you swear someone from India prepared for you. Tonight we had this sauce cooked with beef, mixed in cauliflower, diced up idaho potatoes, carrots slices, onions, and it was delicous. Served with some frozen naan from Trader Joes that heats up in toaster oven in just a few minutes, along with basmati rice - browned first then add 3 cups of water to 1 cup of basmati rice and cover for 25 minutes or until scattered holes. What a great meal and this paste is an amazing time saver. This is the way to go. I was just thinking of how I wished I had discovered this paste when I first discovered that I loved Indian food when I lived in NYC in my early 20's in grad school. If only I had know the tricks such as using a paste like this, I would be making indian food at my apartment all the time. Back then I lived in the east village and walked over (just 4 blocks away) to the famous 6th street Indian restaurants of the several times per week. When I moved to SF, I lived luckily just a block from Shalimar for many years and was a regular customer. Now, I'm in suburbs with kids so for indian cooking, I now use 1,000 Indian Recipes by Neelam Batra - which I call my "Joy of Cooking for Indian Food" - it has everything. Buy this paste, along with the Vindaloo and Biryani sauce, and you'll be glad you did. My 3 year old girl just looked at me, eating some of the cut up beef cooked in this sauce, announcing "This is good"! Now that's a winner.

I have tried several of the Asian Home Gourmet spice packets, and so far I have been pleased with them all. The Korma curry was fantastic. You just saute onions with some oil and the spice packets. Add your chicken and stir until it is browned, add water and let it simmer for 15 minutes. Finish off with some coconut cream or yogurt. When I mix yogurt into this dish (or any curry dish) I mix a bit of flour in with the yogurt. That keeps it from curdling. Give it a try. It is a smooth, mild curry.

I discovered Patak's Brinjal Egg Plant Relish in the 1990s, before the label was sold to a UK food conglomerate. At the time, it was called Patak's Brinjal Aubergine (or Bringal Pickle Aubergine in some markets).
When the company transferred across the Atlantic, the new owners chose to abandon this little gem in favor of Patak's other chutney's and mint pastes -- all of them terrific. But for me, it was like losing a best friend. Talk about COMFORT food... I called the new owners at least once a year begging for a return of ambrosia.
For me, it was like trying to break a drug addiction, but in this case, there was no methadone in site. It's difficult to describe a flavor in a text review, but let me try...
Some of us like our pastes, sauces and relishes *HOT*. (This one is modestly rated as "medium"). But when recipes add chili or other heat, it is far too easy to drop the ball on the other flavors. Would you like some sweet, spicy & natural flavors dancing amongst the tangy heat? Do want a flavor that makes you close your eyes and praise the designer for giving you a tongue? If this describes you, then this is as close to paradise as it gets. Next, let's talk about VERSATILE. I spread this baby on everything (the word "spread" requires artistic license. Some firm eggplant chunks are as big as your little finger!)
Do you have to be Indian to eat this relish? Heck no! I'm a mid-west raised, New England Yankee. But this little jar of heaven has become one of my raison's d'etre (Translation: "reasons for existence"). To be fair, you have to love Indian or Mediterranean spice. It's loaded with chili, fenugreek, coriander, mustard and turmeric -- and especially fresh garlic (definitely not roasted or denatured!). And of course, it has just the right amount of heat. The basic flavor component is a bit like fermented raisins or rum w/raisin, though I doubt that there is any alcohol.
Verdict: 6 out of 5 stars. (That's not a mistake. It's THAT good!)

I like to tinker in the kitchen and make my own chutney but when winter comes I fill my pantry with Patak's. Compared with other chutney brands, I find Patak's offers a bolder taste that is both spicy and salty.
We buy Sweet Mango Chutney for the entire family because Patak's rates this blend at two chilies on a five-chili scale. Our sons, ages 7 and 5, have no trouble enjoying the chutney. I like hotter chutney as well but don't want to use up the refrigerator space by storing multiple jars.
Chutneys - derived from the Hindu word chatni - have many variations and can range from sweet, sour, hot or mild. Chutney consists of fruits, vegetables or a combination of both that is reduced to a pulp that is roasted or simmered and flavored with spices, sugar and vinegar.
Patak's Sweet Mango Chutney blends juicy mangoes with authentic spices and is served as a condiment to a curry but is also delicious on sandwiches (especially turkey, so keep it handy after Thanksgiving!) and hot salads.
Aida Mollenkamp at Chow offers this recipe for Cheddar and Chutney Tea Sandwiches.
TIME/SERVINGS
Total: 35 mins
Active: 5 mins
Makes: 8 tea sandwiches
The question is not whether cheese and chutney go well together, but rather which cheese to choose. As a nod to the British, we've opted for an aged sharp cheddar to star in this sandwich, but snacking in the test kitchen revealed that fresh goat cheese is a close runner-up.
Game plan: Let the sandwiches rest at room temperature for 30 minutes before serving, so the chutney has time to soak into the bread.
INGREDIENTS
8 tablespoons mango chutney
16 slices (2-1/2-by-2-1/2-inch) dark pumpernickel cocktail bread
4 ounces aged sharp cheddar, thinly sliced
INSTRUCTIONS
Spread a thin layer of chutney on one side of each bread slice. (You will use 1 tablespoon per sandwich or 1 1/2 teaspoons [1/2 tablespoon] per slice of bread.)
Top 8 slices with a layer of cheese (about 1/2 ounce per slice) and close sandwiches with remaining 8 slices of bread. Let sit about 30 minutes before serving to allow flavors to meld. Serve sandwiches whole, or if you like, slice each sandwich in half on the diagonal.
Here's another delicious chutney recipe I found online:
Chutney-Glazed Cheese Pate
6 oz. cream cheese, softened
4 oz. sharp Cheddar cheese, shredded
3 tablespoons dry Sherry
3/4 teaspoon curry powder
1/4 teaspoon salt
2 green onions, finely sliced (optional)
Mango chutney
Process the first five ingredients using a food processor until well blended. Spread cheese mixture in a ½" thick disc on a serving platter. Cover and chill until serving time. At serving time, spread the top of the cheese with chutney. Top with sliced green onions. Serve with crackers.

I actually prefer Thai red curry Thai Kitchen Red Curry Paste, 4-Ounce Jars (Pack of 12) to Patak's but this is pretty good too. By definition, Madras is hot so you have a few options: deal with the heat, use coconut milk or yogurt to mellow it out.
This curry in combination with a pressure cooker = Dinner in 20 minutes. Personally, I like boneless skinless chicken thighs. For vegetables, I use an onion, a potatoe, some carrots and occasionaly a tomato. When I feel like splurging a little, I use boneless lamb or bone-in goat.
On the econimcal scale, this product is very cost effective. On the I'm lazy scale, this product makes meal preparation a breeze. Like I said: Use a pressure cooker.

I love Indian food. I own two Indian food cookbooks, but find the list of spices so daunting that I've never tried any of their recipes. I heard from a coworker that prepared Indian curry pastes were available at specialty stores, so I looked for them here at Amazon and was delighted to find Patak's curry pastes. The spice level is nice, for those of us who like our food hot and spicy, and you can always add more paste if you want more kick.
Here are the ingredients: Vegetable oil, cilantro, salt, tamarind, water, cumin, turmeric, chile pepper, ground ginger, garlic powder, maize flour, spices, acetic acid, citric acid, lactic acid.
And here is a basic recipe from the label:
Shrimp Vindaloo, serves 2
1 medium onion, diced
2 tbsp vegetable oil
8 oz. fresh shrimp, peeled (or any other meat)
3/4 cup water
4 tbsp Patak's hot vindaloo curry paste
1/2 cup diced canned tomatoes
hot, cooked rice
Saute onion in oil. Add shrimp and saute until pink. Stir in curry paste and cook about 1 minute. Add tomatoes and water. Simmer, uncovered until the shrimp is cooked, about 5 minutes. Serve over hot, cooked rice.
I tried it with beef (which you'd never be able to order at an Indian restaurant) and simmered for 25 minutes, and it turned out pretty well. Not exactly restaurant quality, but very good for a prepared paste. I now keep Patak's paste and some tomatoes on hand, in case I want to whip up a quick, spicy dish using leftover roast chicken or beef. I look forward to trying the other Patak's pastes.

My husband and I love Patak's Tikka Masala cooking sauce (albeit with some tweaking involved), but we did not care for this korma sauce. We found it too sweet and not like the korma curries that we've tasted in Indian restaurants, and we eat Indian food quite often. There's a strong sweet flavor to this sauce which is not found in the korma dishes we've tasted. I guess I could tweak the recipe and add ingredients to minimize the overpowering sweetness but then I'd rather just cook the korma curry from scratch - the whole point of this sauce is to save time and fix an Indian curry with minimal fuss. I would not recommend this particular Patak sauce.

Patak's Rogan Josh Curry Cooking Sauce is disgusting. I made it for dinner and couldn't force myself to eat more than a few bites. It tasted nothing like Rogan Josh; the texture, color and flavor were all wrong. It didn't even taste like any kind of curry sauce. The jar I purchased indicated "medium", which I expected to indicate the heat/spiciness, but it was mild by any standard. It tasted like warm tomato paste. (I shook the jar, emptied the entire contents into the pan and followed the cooking instructions exactly.) You'll just have to take my word for it that I would not rate a mediocre product with one star; this was a truly dismal eating experience.

Mangos -- the number one fruit in the world -- are an integral part of Indian food. Personally, I have deeloped a tolerance for really hot foods. On a scale from one to ten, I'd put these at about a two or three.
This mango relish is not mango chutney (which is a totally different product). This relish has nice chunks of mango and most people can tolerate the moderate heat. This is the relish I serve to guests. Like most Indian relishes, chutneys and pickles, it doesn't take too much. One jar is probably about 30 servings so do the math: six jars is 180 servings.

Very tasty and so fast to make up a curry with leftover chicken or beef. I do add some carrots (for a veg) and red & yellow peppers for some added color!

I have used other curry pastes by this company and I wanted to try this one, which is not available in local supermarkets. I ordered a 6 pack and gave some containers to friends. We all agree that we like it a lot in stews, soups and main dishes. It is easy to mix with hot food and keeps well in the refrigerator. Yummy addition to spices.

Yummy, yummy!
This curry paste is now my favorite. It is easy to use, store, and best of all it is delicious! Pataks Curry is very mild....not super spicy like many others. My husband likes flavor and a little spice so this is his favorite as well. I can use the one jar for about 4 meals which is a great deal.
I have found that is it so simple to make a "stir-fry" with a protein like tofu, chicken or even salmon and then add veggies such as carrots, or potatoes. There are many combinations and just about any typical veggie taste great in this sauce (love cauliflower). I think it is best kept simple with 2 or 3 ingredients.
This sauce is great for an easy meal with guests, throw the rice in the steamer, make the curry stir-fry, and add another side dish and you are set. Our friends love it!
Pataks also makes other great sauces but this is my favorite to keep on hand at all times.
