(More customer reviews)They replace the sodium chloride with potassium chloride, with is arguably healthier while still being salty tasting, however they replace the free form MSG with hydrolyzed soy and corn protein, which is arguably worse then MSG and certainly contains MSG. It's against government regulations to say something has NO MSG then have hydrolyzed proteins as ingredients, but if you can get by that, the stuff tastes great!

(More customer reviews)This has a distinct aroma and yet it only brings out the original flavor of the foods you sprinkle it on. It does what a good salt substitute should do which is to bring out your favorite flavors. Actually, it seems to do the job even better than salt itself. Most of the elderly folks that live around here prefer this to salt by far because it doesn't have that tingling aftertaste. I would recommend buying this if you can't find this at your local grocery store or supermarket even though the shipping is more expensive than the product.

Chef Paul Prudhommes Magic Seasoning Blends has been in business since 1982 when customers from Chef Pauls New Orleans-based K-Pauls Louisiana Kitchen restaurant began asking to take home the chefs unique seasonings. What was once a garage-housed operation has grown to a 50,000 square-foot plant. Currently, Magic Seasoning Blends offers all-natural, MSG free products in sixteen different blends; Magic Pepper Sauce; seven ground, dried Magic Chiles; four Magic Sauce & Marinades; and several cookbook gift-packs.
To use Magic Seasoning Blends in Chef Pauls recipes simply add up the amount of dry herbs and spices called for in the recipes "Seasoning Mix". Substitute the appropriate blend (for example, if you were doing a chicken dish, youd substitute Poultry Magic) in the proportioned amounts for each cookbook listed below:
Substitute approximately ¾ the amount for Chef Paul Prudhommes "Seasoned America" CookbookSubstitute approximately ½ the amount for Chef Paul Prudhommes "Fork In The Road" CookbookSubstitute approximately the same amount for Chef Paul Prudhommes "Fiery Foods That I Love", "Louisiana Kitchen", "Kitchen Expedition", and "Louisiana Tastes" cookbooks
If a recipe calls for a sweet spice or an unusual ingredient subtract the amount of sweet or unusual spice prior to adding up the dry herb seasoning mix, then add back the subtracted ingredient(s) to the Magic Seasoning Blends amount required for the conversion.

We used to add the same spices using various recipes, but chili would always seem to come out differently each time. No 'hit or miss' with this product - individual packets of each spice give you maximum control, should you want to add less. We love this stuff so much, that we panic when we 'run low' at home (less than 3 kits), in case we can't find the Mix at our local grocery store! So, we bought a case!

(More customer reviews)I have been using Bob's red mill unsweetened coconut for about 2 years now and it's great. My favorite use for it is as part oif a coating for chicken or fish. You just toast the coconut in a nonstick pan until nice and deeply browned and then mix it half and half with Panko crumbs or regular breadcrumbs. Dredge your chicken pieces in flour, dip in egg and then coat with the coconut & breadcrumbs. I bake mine in the oven but you can also deep fry. This coating is also excellent for shrimp or scallops. Since it's unsweetened, you can use it in carribbean stews or any other savory dish. For baked goods it's especially helpful in controlling the amount of sugar in the final product. Coconut doesn't really need to be sweetened when it's added to other sweet ingredients. For example, those 7 layer dream bars with chcolocate and butterscotch chips as well as sweetened condensed milk don't really need sweetened coconut now do they? I also add this coconut to banana nut breads, chocolate brownies and icings for cakes. If you are making a regular white cake with coconut icing, you can punch up the coconut quotient by trhwoing in a half cup or so into the mix and then some more into the custard filling and get triple coconut cake! Yum. It's not hard to toast this coconut but be aware that once it starts browning, it browns VERY fast and will continue browning even after you remove it from the heat. Once you have bought this and used it, you'll find a hundred other uses for it. try the coconut encrusted chicken for something different!
