I was nostalgic for old-fashioned egg noodle dishes (like casseroles, kugels, and noodles w/ farmer cheese and pepper) but wanted them a little healthier. I don't think that anyone else makes this anymore, but that's o.k. because these are yummy. A healthy trick I've learned is to get a close approximation (trial & error) of how much water the noodles absorb while cooking, then after bringing just that amount of water to a boil, cook the noodles covered on the lowest possible heat occasionally freeing them from the bottom w/ a wooden spatula. That way all B-vitamins and minerals stays in the noodles instead of being lost in the water. It takes a bit of practice not to end up w/ a solid block of noodles. Adding a little oil or butter halfway through cooking helps.
Anyway, whether you cook them like this or using the standard directions, they're delicious and hold together better than some other whole wheat noodles I've tried in the past.
