When I first told my family they were eating Barley for dinner, they were less than impressed until they tasted it. We now have it almost weekly - it is inexpensive, prepares in no time, healthy and very tasty. I usually prepare it just a bit thicker and then add cheese to the top (ok, that part isn't so healthy)and I never get any complaints about dinner. If I know we're going to be busy on a particular day, I also prepare this soup a day in advance and just heat it up when its time for dinner. Great soup.
