(More customer reviews)I lived in Louisiana for 15 years before moving to New England, so I've had LOTS of gumbo. Making gumbo from scratch can take as long as 3 hours from cooking the meat to making the roux and then putting it all together to simmer. But Zatarain's (pronounced Zat-uh-ran's) is my quick solution.
Just follow the directions on the box and add 3 stalks of chopped celery and 3-4 chopped green onions (DO NOT use white onion, the taste is completely different and you and your guests will be very sorry...trust me). The resulting gumbo tastes like the real thing from New Orleans. I have made both shrimp gumbo and chicken/sausage gumbo, and both come out great with the few additions I've mentioned. Some people also add a few chopped okra, but not me.
HINT (shrimp gumbo): Add cooked shrimp AFTER the gumbo has finished simmering and just before serving. It will taste much fresher.
HINT (chicken gumbo): Use a rotisseire chicken from the deli or cook the chicken during the day in a slow cooker while you're at work. Saves lots of time as well.
I also like the "base" better than the "mix" since it allows you to add as much or as little rice as you like to the soup. Also, the "base" is better if you want to freeze it. I've found that one box usually feeds 4-5 people since they always go back for seconds.

McCormick Cajun Seasoning 3.18-Ounce Unit (Pack of 6) Review

(More customer reviews)I really liked the original recipe and couldn't find this stuff in any local stores. Original label (as pictured here) reads "Cajun seasoning, great for chicken" and ingredients are: "Salt, Spices (Including Red Pepper), Paprika, Garlic, Onion, and Silicon Dioxide (Added to Make Free Flowing)". Since that is what was listed on the Amazon page I placed an order.
Well the label and the ingredients have changed. The label now reads "Perfect Pinch Cajun, natural, no MSG" and ingredients are now: "Salt, spices (including black pepper, thyme, and red pepper), paprika, garlic, onion, and celery seed." While I'm happy the ingredients are still all natural, the celery seed and black pepper really throw both the taste and smell off.
The Amazon listing does include a legal disclaimer stating: "Actual product packaging and materials may contain more and different information than what is shown on our website", but I really wish the description matched the product sold.
So before anyone else buys six jars of this stuff, beware, you are not going to get the product as described.

(More customer reviews)This soup is DELICIOUS! I have tried "bagged/boxed" soups and they usually aren't very good.
Plus they usually have maltodextrin and yeast or other things in them I want to avoid.
This soup is VERY simple, tasty and healthy. The ingredients are:dehydrated black beans, corn, red and green peppers, onions, garlic, epazote, and chili spices. It seems that they got the balance of spices and veggies just right. I find that difficult to do on my own. Also since it packaged up nicely you don't have to go "scavenging" in your spice cabinet for all the spices. I use my own chicken broth I make after roasting a chicken and it's a very healthy meal. (There is no added salt so if you are restricting salt you decide how much to add and what type of salsa you use.)So hurry up Amazon and get this in! :0)
