creamy yet not mushy. this is the ideal rice for risotto. i'm not sure what the other reviewer did to have a bad result - perhaps the rice was "shocked" with cold broth or wine (you must always heat your broth and wine before adding it) - but this stuff is the real deal. i was lucky enough to find this in two-packs at costco for 99 cents! that's $14 worth of rice for less than a dollar! still, i'd gladly pay full price, since a single cup will yield enough risotto for four people, which makes it quite economical.
my process:
heat heavy pan (i use a 3-qt sauté) and add a little olive oil (i add a little clarified butter, too)
heat a separate saucepan with at least a quart of chicken stock
add some chopped onion to the sauté pan
sauté the onions for a couple of minutes
add 1 cup of rice, stirring to coat with oil
add 1/3-1/2 cup of dry white wine, heated, stir until absorbed
keep adding stock from the saucepan until it is absorbed, one ladle at a time
after 20 mins or so, the rice will be creamy and ready to serve
i usually finish with a bit of butter and some grated parmesan and maybe some fresh ground black pepper.
at this point, you can add any extras you have (i like steamed or grilled asparagus, chopped)

While traveling through Europe, we stayed at a lovely bed and breakfast in the Swiss Alps. One evening, the owners of the inn prepared a dinner for the guests that included lemon chicken and parmisan risotto. While the chicken was delicious, I fell in love with the creamy yet meaty texture and delicate flavor of the risotto, a perfect accompaniment, and attempted without success to duplicate this dish at home. Recently we began switching to organic and natural foods, and made our first box of Lundberg Organic Parmisan Risotto. I was taken back to that lovely inn with the first delectible bite! I was so amazed that the rich flavor and texture of a homecooked dish could come from a box! This risotto is ideal with so many main courses - chicken, fish, Italian meat dishes - and can also be the foundation of a hearty vegan dish with added vegetables and nuts. I'm impressed with all of the healthy Lundberg products and recommend them without reservation, but this Parmisan risotto remains our family favorite!

Sure, you've got to have some patience if making even a simple risotto with little ingredients, but it's the cooking time, the prep and then stirring, for about thirty minutes or so, that makes this so. If you're a rice lover though, and you've never tried making this creamy dish, you must give it a try! Not only is it easy to make, but it's one of those dishes that you can put on the table, roll out the impressive name it comes with (I just love the way risotto sounds when spoken) and you've got an impressive and tasty presentation for guests or even your family.
It can be as simple as the great recipe on the box, which Amazon lists in the label description above, or you can fancy it up with some great grilled chicken or shrimp and crispy (or steamed if you prefer) veggies. I would recommend using a good wine, one you'd likely drink with your meal, since this only adds to the amazing flavor (cooking wines DO NOT do the trick!). Experiment with the recipe on the package if you want. Parmasan cheese is a great additive at the very end, it's rich pungent smell coalescing with the other flavors excellently, but don't be afraid to try some others,. i.e. fontina, asiago--heck, even some cheddars work great! When those short grains start to release their starches, the creaminess comes into play and you're almost ready to eat! The smells are devine and it's a dish you will not be able to resist. RiceSelect's risotto rice works great every time, making for the perfect risotto experience.
