The manufacturer describes this better than I can. I've been using their products for years with fantastic results. It lasts for years in the refrigerator -- but it does get tough -- so use it within 6 months if possible. It's a pleasure to look at the nutritional information and see that one quart of reconstituted stock contains a mere 310mg of sodium (13% of DV).
