Le Creuset Enameled Cast-Iron Mini Cocottes Review

The properties of cast iron make it the best little fondue pot and mini sauce/gravy boat. Just heat up cream and chocolate to make the ganache and the pot keeps it warm for a long time without a flame. That way you can carry it around the house. Or use on a stand and flame like a regular mini fondue pot. The cast iron distributes the heat evenly and helps prevent scorched chocolate/sauce.
Great for a romantic evening or when you just want a few bites and not chocolate fondue for 6. Also good for letting your guests flavour their own personal fondue while still being social.
I also use several of them as gravy boats on a long table or next to a particular dish if serving buffet style. Much better than poorly made insulated gravy boats that fall apart or trap food under the rim.
Cons: Not cheap & you have to buy more than one to make it really useful.

This miniature round cocotte ("cocotte" being the French word for Dutch oven) offers all the benefits of durable enameled cast iron in a compact, stylish design that's easily presented alongside a place setting at the table. Whether starting with an appetizer of warm spinach and artichoke dip or finishing a meal with small individual portions of fruit cobbler, the 1/3-quart mini cocotte, which measures 5-1/5 by 4 by 3-2/5 inches, offers exceptional versatility and convenient options for both preparation and serving.
Like other pieces in Le Creuset's line of enameled cast iron, the cookware's exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its durable, nonreactive, nonporous, satin black interior enamel offers a smooth surface for cooking and baking. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the vessel cooks food uniformly and gently without hot spots and can be used for cooking on the stovetop or finishing in the oven. The cookware's cast-iron loop side handles ensure a secure grip during transport, and its tight-fitting lid with an easy-grip phenolic knob helps trap heat, moisture, and nutrients. The cookware can be safely used in the oven up to 350 degrees F and on any stovetop, including induction. Best of all, it moves gracefully from the oven to the table for serving to the refrigerator or freezer for storing leftovers. The cookware carries a lifetime limited warranty and should be hand washed for best results.

Le Creuset Enameled Cast-Iron 2-1/4-Quart Pumpkin Casserole, Flame Review

I went mad when I first saw this amazing cassarole. Fans of the other shaped le creusets will love this beauty. Unlike the heart and shamrock designs, the pumpkin has a more realistic 3D shape. But what really impressed me was the daring offset handle on the lid. Genius! Of course, the shaped cassaroles have the same high quality of all of the le creuset pieces. I use mine mostly for stovetop dishes that finish in the oven. Of course, like all le creuset dishes, this one does double duty as tableware--but this time, with even more panache than usual! Okay, I'll quit gushing now. But I just love that pumpkin!

Fox Run Heat Diffuser Review

Fox Run Heat Diffuser

I've been using my diffuser for about 10 years now. Sure enough, when you first fire up the heat, there is some smoke. It'll pass quickly enough if you actually use it the first time. On the other hand, if you fire it up, panic when you see the smoke and shut it off, then it will do the same the second time... and so on. The odor (after the smoke era) is subtle but you're aware of it. I found after about 4 years the wooden handle got loose due to the wood gradually turning to charcoal. But it doesn't come off.
Now after all that being said; it works perfectly! I've been very happy with the performance of this diffuser. It allows for mild heating of the most delicate sauces without fear of scorching. And, as it has a handle, you can move it easily as well as perform the TIP below.
Considering the pricepoint, it is quite the deal.
TIP: When using this to continue heating something at a very low simmer, preheat it by firing up one side first, then flip it over and lower the heat. It will save the 'catch-up' time to keep the simmer.

When cooking a delicate sauce, or melting chocolate, it's important to use low, gentle heat. This diffuser adds a layer of protection between the burner and the bottom of the pan, yet its perforations allow heat to get through. Protect your beautiful pots and pans with this heat diffuser.
